Happy Valentine’s Day! James & I had baby music class together today so I dressed us up in red & black. Who says matching outfits are just for moms & daughters? Ben & I celebrated this weekend with dinner at Gitane. Huge thanks to my parents for coming over to spend the evening with James! It was fun to put on heels & earrings & head to the city just the two of us. Gitane is a gorgeous restaurant in San Francisco, frequently voted the most romantic restaurant in the city and featured in my list of where to eat for Valentine’s Day. They unfortunately lost their lease and are closing. It was amazing to get to go one last time to snag some of their delicious bon bons (goat cheese stuffed dates wrapped in bacon). Since we had our big romantic night out on Saturday, today we are keeping it low key with dinner at Sweetgreens (I’m addicted to their harvest bowl & would eat it every day if I could) with our tiny Valentine, followed by dessert & wine after James goes to bed. We are opening a bottle of Waterfall, an amazing Albarino that we got from the wine maker in St. Helena and digging into these Strawberry Brownie Valentine Cupcakes!
These Strawberry Brownie Valentine’s Day cupcakes are super easy to make. Essentially you make two batters: one brownie, one strawberry cake. Then you layer them, bake them, eat them! I have included the modifications that I mentioned in yesterday’s Galentine’s Day Strawberry Cupcakes to make boxed batter taste homemade! You can absolutely make your batter from scratch to make these or pick out a high quality boxed mix.
An alternative to the layered look is to do a swirl! Pour the strawberry batter in first, then add the brownie batter on top. The brownie batter is heavier so it will sink down through the strawberry batter creating a swirled look! Doing it this way did not come out of the pan as easily nor does it look as pretty, but it was so delicious! I think the swirl is even tastier than the layered look!
Just look at that bite into these! So much chocolate, yum!
You can do a cream cheese or a buttercream frosting on top of these to make them extra decadent BUT the way I did the batter for both the brownie & the strawberry cake, makes them extra gooey. To me, all they need is a little drizzle of chocolate and you are good. If you go with a frosting, I’d opt for a boozy vanilla one. 🙂
- 1 box brownie mix
- 1 egg
- 1/4 cup water
- 1/2 cup oil
- 1 box strawberry cake mix
- 4 eggs
- 2/3 cup butter
- 1 cup frozen strawberries, chopped
- 1 cup chocolate chips
- strawberries for garnish
- Preheat oven to 325 degree.
- Combine brownie mix, egg, water, and oil.
- Mix well.
- Spoon into greased cupcake tins until half full.
- Mix strawberry cake mix, eggs, butter, and frozen strawberries.
- Spoon on top of brownie mix.
- Bake for 18 minutes or until a toothpick comes out clean.
- Be careful removing the cupcakes. They come apart easily.
- Melt chocolate.
- Top cupcakes with strawberries & drizzled chocolate.
