I did this cheeseburger in a cast iron skillet and it was seriously good. You can modify it for outdoor dining by throwing it on the grill. Just be sure to remember the avocado and Gruyere! Every good cookout needs a big dish of baked beans. This BBQ bean dish has three different kinds of beans, is super high in fiber, and can be made ahead of time so if you are heading to a friend’s house and need something to bring, this guarantees that you will be a hit.
You can’t eat BBQ without cornbread right? I am partial to homemade cornbread used to soak up the extra sauce. Which cornbread camp do you fall into? Sweet, cake like Northern cornbread or savory Southern cornbread? For a quick cheat, make boxed Jiffy cornbread and add a can of creamed corn to it! You will get light, fluffy cornbread with chunks of corn and it is done in under 15 minutes from start to finish!
What better way to wrap up a delicious, start of the summer meal, than with homemade popsicles??? These honey vodka popsciles are just the thing to cap off the meal. You can also give Boozy Peach Popsicles a try if you want some options. If you’ve got kids celebrating with you, they can make their own popsicles with fruit juices too!
This Memorial Day, Ben & I are headed up to Bodega Bay to do some kayaking, hiking, and coastal driving.
