This month is all about getting healthy and on the right track for the New Year. We’ve covered detox tea, energy bites, and a healthy smoothie. Now let’s talk about dinner. Healthy dinners need to be delicious and easy to do, otherwise they just aren’t going to be made. Healthy Panko Salmon is one of our favorites. It’s super good for you salmon, but the sweetness from the honey and the crunch from panko make it seem so decadent.
Panko Crusted Salmon | www.sweetteasweetie.com Let’s look at why this dish is so good for you. Salmon is an excellent source of vitamin B12, vitamin D, andselenium. It is also a good source of niacin, omega-3 fatty acids, protein, phosphorus, and vitamin B6. Using mustard (made from real mustard seeds, not the yellow kind!) gets you calcium, magnesium, phosphorous and potassium. Then there is the honey. It can be used as an antioxidant, it has antimicrobial, antibacterial and anti-fungal properties, it boosts athletic performance, and it is a rich source of vitamins and minerals.I always buy local honey. Its so good for you in preventing allergies! Finally we have panko. Healthy Panko Salmon

Ingredients

  • 4 Salmon fillets
  • 1.5 Tbsp Dijon mustard
  • 1.5 Tbsp Honey
  • 1 Clove of Minced Garlic
  • 3/4 Cup Panko Crumbs
  • 1 Tbsp Mixed Herbs (I used an Italian Herb mix or Herbs de Provence)

Instructions

  1. Preheat oven to 400 degrees.
  2. Spray a baking dish with non-stick cooking spray.
  3. In a small bowl, whisk together mustard, honey and garlic.
  4. In a shallow dish toss together panko bread crumbs, herbs, and a sprinkling of salt and pepper.
  5. Brush the top of a salmon with honey mustard mixture.
  6. Dredge the honey mustard side of the salmon through the panko mixture.
  7. Brush remaining side of salmon with honey mustard mix, then flip it and coat it in the panko.
  8. Place each coated salmon, side by side in your greased baking pan.
  9. Bake for 13-15 minutes until salmon is flaky and serve!
