Garlic Roasted Broccoli & Cauliflower is one of those go to dishes that everyone has. It’s super easy to make, everything can be thrown on one pan without too much fuss. I love making this as a side dish whenever I am super tired. It’s especially helpful during the summer when I am trying to squeeze in as many activities after work as possible. 04Start with some nice big heads of cauliflower, broccoli, and garlic. I personally prefer to buy local and organic whenever possible. No amount of washing can get some of those chemicals out.

Chop everything up into bite size pieces. Big pieces seem fancier some how, but smaller pieces will cook faster which is really helpful on busy nights. Spread out on a cooking sheet & drizzle with olive oil. I love to pick up flavored olive oils and use them on this dish. They are very subtle but add a fun hint of flavor. You can always stick with the Extra Virgin standby though! Dice the garlic into tiny little pieces. Stir it in with Parmesan cheese and sprinkle generously over the veggies. Throw the pan in the oven and relax until they are done!

Garlic Roasted Broccoli & Cauliflower

Ingredients

  • 1 Cup of Chopped Broccoli
  • 1 Cup of Chopped Cauliflower
  • 4 Cloves of Garlic
  • 1 Tablespoon of Olive Oil
  • Salt & Pepper
  • 1/4 Cup of Grated Parmesan Cheese

Instructions

  1. Preheat the oven to 350 degrees.
  2. Chop up broccoli and cauliflower into quarter size pieces. Be sure to trim away the tough stems.
  3. Mince garlic until very fine.
  4. Spread veggies over a cookie sheet.
  5. Drizzle with olive oil.
  6. Sprinkle with chopped garlic.
  7. Bake for 20 minutes or until a fork can slide in easily.
  8. Remove and sprinkle with Parmesan cheese. Return to oven for 1-2 more minutes.
