Garlic Roasted Broccoli & Cauliflower is one of those go to dishes that everyone has. It’s super easy to make, everything can be thrown on one pan without too much fuss. I love making this as a side dish whenever I am super tired. It’s especially helpful during the summer when I am trying to squeeze in as many activities after work as possible. I’m looking forward to taking advantage of warm evenings as soon as I can. If you’re looking for some summer inspiration, check out my Summer Pinterest board.

04Start with some nice big heads of cauliflower, broccoli, and garlic. I personally prefer to buy local and organic whenever possible. No amount of washing can get some of those chemicals out.

Chop everything up into bite size pieces. Big pieces seem fancier some how, but smaller pieces will cook faster which is really helpful on busy nights. Spread out on a cooking sheet & drizzle with olive oil. I love to pick up flavored olive oils and use them on this dish. They are very subtle but add a fun hint of flavor. You can always stick with the Extra Virgin standby though! Dice the garlic into tiny little pieces. Stir it in with Parmesan cheese and sprinkle generously over the veggies. Throw the pan in the oven and relax until they are done!
