Summer is my busiest season at work & I’ve been running around like crazy. It’s making me super into power foods right now. Power house foods like quinoa, sweet potato, fresh creamy mozzarella, and tons of veggies are what is giving me the energy to keep up with this crazy summer. My parents have a great backyard garden that’s been sprouting fresh zucchini & cucumbers like wildfire. I’m loving the easy access to all of the fresh veggies like these yummy cucumbers. I kept stealing them out of the bowl while I was making it!
This Fresh Mozzarella and Cucumber Quinoa Salad is loaded down with tons of power foods that will keep you super full. The sweet potatoes & quinoa give you the whole grains and complex carbs that you need, the cucumbers load it up with fiber & greens, and the mozzarella gives it that creamy taste without needing a heavy, calorie loaded sauce. You can keep this plant based & vegetarian or you can add chicken in it to make it a full meal for those carnivores. You may remember that I’ve used fresh mozzarella in several of my favorite recipes including caprese chicken & caprese dip. It really takes me back to the Italian countryside that I shared earlier this year, which is something that I’m pretty much always trying to do! Its one of my favorite cheese to work with because it is super creamy with a subtle flavor. Stella® Fresh Mozzarella goes super well with other fresh ingredients such as mint or cucumbers, and complements crisp cool wines….perfect for summer! (Much needed after a long day of camp!)
- 1 Cucumber sliced
- 1 Eight ounce ball of fresh Stella Mozzarella
- 1 Cup Quinoa
- 1.5 Cups of water
- 1 Sweet Potato
- Add quinoa to water & bring to a boil.
- Lower heat and simmer for 15 minutes.
- Remove from heat and let sit for 5 minutes.
- Wrap sweet potato in aluminum foil and bake for 45 minutes.
- Dice up sweet potato into bite size pieces.
- Dice mozzarella up into bite size pieces.
- Slice cucumbers.
- Toss all ingredients together in a bowl & serve.
- **This is intended to be served cold, but can also be served warm.
