Some of you may have been following along with my countdown to Valentine’s Day with Breakfast in Bed, Cheesecake Buttercakes, and Most Romantic Restaurants. I love all celebrations, but this one is especially important to me because this is our first Valentine’s Day as a married couple! I am so thrilled to spend this day together celebrating our new love.

I decided to make chocolate chip meringues as little bite size valentines for my husband and friends this year. Its a holiday that tends to be loaded down chocolates and yummy desserts so I went with something a little lighter. These light and crunchy meringues are only 35 calories each with just a hint of chocolate!
Chocolate Chip Meringues
- 4 egg whites, room temperature
- 1/4 teaspoon salt
- 1/4 teaspoon cream of tartar
- 1 tablespoon vanilla
- 1 1/4 cup sugar
- 1 cup semisweet chocolate chips (I prefer the mini chocolate chips, but any size works!)
Beat egg whites, salt, cream of tartar and vanilla on medium-high speed until soft peaks form. This can be done with a stand mixer or a hand mixer. Stand mixers are so much easier, but I have found that I get better peaks when I use a hand mixer because I can tilt the bowl and beat more air into egg whites.
Slowly add sugar and beat until stiff peaks form, about 5 minutes. If you are going to pipe your meringues, do so now. Then artfully arrange mini chocolate chips on top.
If you are going to do them the old fashioned way (with a spoon), gently fold in chocolate chips by hand until combined.
Drop batter by heaping spoonfuls onto a foil covered cookie sheet.
Cover meringues with red or pink sprinkles.
Bake at 300 degrees for 25 minutes until the cookies are cooked and slightly golden.
Turn the oven off, and let the meringues cool in the oven for an additional 30 minutes until cool.
