For those of you looking to get in some last minute holiday baking, I am sharing my favorite treat to make! Every year I make a plate of treats to take to friends and family for the holidays. One of my all time favorites is this Apricot Bark. Those of you who know me usually get a piled up plate or baggie of goodies from me each year and it always includes Apricot Bark! Its so delicious, super pretty, AND easy to make. I actually made this bark with James in the baby carrier! I don’t think I’ll try that again, but we did it! Hot melted chocolate & baby fingers made for a slightly stressful few moments, but I couldn’t not make it!

It’s super easy to make. The trickiest part is melting the chocolate in a double boiler, but you can melt small batches in the microwave if you want. Just do it 30 seconds at a time and stir in between so that you don’t burn your chocolate. Burnt chocolate is the worst! I hate seeing it all get tossed out! Back to the cooking….spread your melted chocolate out on a cookie sheet. Sprinkle with toasted almonds & chopped up apricots. Finish it with a drizzle of the opposite color chocolate. This is super important because it locks the toppings onto the bark! Without it, when you go to break up the bark, all of the goodies fall off.

Dark chocolate, almonds, and apricots are all nutrient dense ingredients. Dark chocolate is a great source of antioxidants. Almonds have protein & fiber. A single piece of apricot is packed with Vitamin A, iron, and   A small piece of apricot bark will satisfy your craving for something sweet while not filling you up with energy empty calories. As we are bombarded with holiday parties and tasty treats, this is the plate to reach for to stay holiday healthy.

I have shared this Apricot Bark with you before in the dark chocolate version, but not the white chocolate version, which I feel you are missing out on! Just look at how gorgeous that white chocolate bark is! I always make both. If I have to melt the white chocolate to do the drizzle anyways, I might as well craft a plate of white chocolate bark! Just be sure to save a little bit of dark chocolate for the drizzle!

Chocolate Apricot Bark


  • 1 16 ounce bag of chocolate chips (dark or semi sweet)
  • 1 16 ounce bag of white chocolate chips
  • 1 cup of dried apricots (1/2 for each plate of bark)
  • 1 cup of slivered almonds (1/2 for each plate of bark)


  1. Lightly toast slivered almonds until they have a golden color to them.
  2. Chop each dried apricot into 4 pieces.
  3. Melt the chocolate in a double boiler or for 30 seconds at a time in the microwave.
  4. Spread melted chocolate over a foil covered cookie sheet.
  5. Sprinkle toasted almonds and diced apricots over the chocolate while it is still warm.
  6. Melt white chocolate in a double boiler or in the microwave.
  7. Lightly drizzle on top of the bark to "seal" in the apricot and almond pieces.
  8. Do the same all over again except with the white chocolate as the base!
  9. Set in the refrigerator overnight.
  10. Break bark into pieces and serve!
