Remember last week’s Black Bean Salsa? Well it’s back this week. This time I am dressing it up in salad form! Black Bean Salad makes a low carb summer lunch option and can be made ahead of time for your week day meal prep.

Chop up some lettuce. I like using romaine lettuce for this salad because its crisper and holds up well in the summer heat. Saute some ground turkey. Toss the ground turkey with a cup of Black Bean Salsa. Pour the combo over the lettuce. Add a few tortilla chips for a crunch.  Serve it up with some Green Goddess dressing!

Having a salad for lunch is a great way to make sure you get your daily greens in. For this salad, I added in some tortilla chips. Adding a variety of texture makes it so much more enjoyable. Just a few chips can make you actually like your healthy lunch so that you will reach for a salad more often. I like to crumble a few tortilla chips up & sprinkle them into the salad for a surprising crunch & save a few for the end to use instead of a fork. Ground turkey is a very lean meat that goes great in a salad like this. When you brown your ground turkey for the dish, make sure to add in some sort of spice. I used Lawry’s Seasoning Salt for this one. Normally I reserve that for burgers, but extra lean ground turkey doesn’t have a lot of flavor. A little bit of seasoning salt goes a long way. Really cut it into the ground turkey so that it distributes well. You can also try pepper, paprika, or fennel for a pop of flavor.

Black Bean Taco Salad


  • 1 Recipe Black Bean Dip
  • 1 Pound Ground Turkey
  • 1 Teaspoon Seasoning Salt
  • 2 Heads Romaine Lettuce
  • Tortilla Chips


  1. Mix seasoning salt in with ground turkey.
  2. Brown on stove top.
  3. Allow to cool.
  4. Combine with black bean salsa.
  5. Chop up romaine lettuce.
  6. Split lettuce around on each plate.
  7. Top with turkey and salsa mixture.
  8. Sprinkle a few chips on eat plate.
  9. Serve!
