One of my favorite Thanksgiving dishes (and post Thanksgiving leftovers) is Cranberry Jello Sauce. The lovely red color can carry this dish well into the December holiday season, making it a favorite make ahead holiday dish as well. It’s simple to make and a fun way bring fruit to the table. I’m sharing this dish with you now because I simply cannot enjoy my leftover turkey sandwiches without cranberry sauce. For me, the two go together like peas & carrots. After the feasting, I always enjoy the standard leftover plates & occasional hot turkey sandwich with gravy, but then its time for cold turkey sandwiches! Potato bread, mayo, leftover turkey, with a big side of cranberry jello sauce. Perfection! I could eat that all week!

A big thing to remember about this dish is that it must set overnight. This isn’t something that you can make at the last minute. I always try and then panic that it hasn’t set. Thanksgiving was a lovely time to spend with family while filling up on loads of yummy dishes. We ended up hosting at the last minute due to some unforeseen circumstances at my parent’s house, but everyone rolled with it. My mom wrapped up the turkey & sides and headed up to our place, while I quickly set the table and set out a drink & appetizer cart. We bustled around our little kitchen and set up a scrumptious buffet complete with a turkey, dressing, corn pudding, mashed potatoes, sweet potato souffle, sweet potato casserole, and Dean & DeLuca biscuits. Cranberry Jello Sauce

Ingredients

  • 1 can cranberry sauce
  • 1 package jello
  • 1 can crushed pineapple
  • 1 can of Sprite or 7up

Instructions

  1. Drain crushed pineapple & add to bowl.
  2. Add in the cranberry sauce. Use a fork to blend the pineapple & cranberry together.
  3. Follow jello package instructions using sprite instead of water & add to fruit mixture.
  4. Place in refrigerator overnight to ensure it sets up.
