This time of year, I like to have a quick, healthy “go to” recipe that doesn’t require a lot of work, but conjures up memories of warmer places. When my husband and I were on our honeymoon last year, we picked up this amazing jerk spice mix. I am normally a total wimp when it comes to spicy. I seriously can’t even handle it. This mixture has the perfect amount of kick to it without setting my mouth on fire. I am still working on recreating this mix, but in the meantime you can pick up jerk seasoning at your local grocery store. McCormick has a good one. Every time I have jerk chicken I am immediately transported to memories of the Caribbean which is exactly what I have been craving this time of the year!

Chicken Breasts

2 Tablespoons of Lemon juice

1 Tablespoon of Coconut Oil

2 Tablespoons of Jerk Seasoning

Directions:

  1. Preheat oven to 450 degrees.
  2. Pour lemon juice over chicken and let it soak in while oven heats up.
  3. Rub chicken with coconut oil.
  4. Coat chicken in jerk seasoning.
  5. Bake for 20 minutes and serve!
